White Cedar Kombucha Recipe

Equipment

  • Wide mouth jar (around 4 litres)
  • Cloth and rubber band to cover the jar
  • Small pot
  • Filter

Ingredients

  • 1 kombucha scoby and its liquid culture (around 350 ml)
  • 12 g black or green tea
  • 200 g sugar
  • 2.5 L chlorine-free or filtered water (+ 4 cups of water for decoction)
  • 12 g white cedar (Thuya occidentalis)
  • 100 g honey

Instructions

Infusion and Fermentation

  1. Pour 500ml of boiling water into the jar, add tea, and allow it to steep for 10 minutes. Remove the tea.
  2. Dissolve sugar in the jar, then add water (total of 3 litres; the mixture should be lukewarm).
  3. Add the kombucha scoby with its liquid culture.
  4. Cover the container with the cloth and rubber band.
  5. Let it ferment for 10 to 15 days, at room temperature. Taste daily to monitor the fermentation progress. Remove the kombucha scoby and 2 cups of liquid when you reach your preferred flavor. Hold onto it for your next kombucha brew.

Adding the Cedar Flavor

  1. Rinse the cedar with hot water.
  2. Place the cedar in a small saucepan, cover with 1 litre of water, and simmer for 20 minutes. Strain to remove the cedar. Add honey, let it cool, and set aside.
  3. Add 3 cups of cedar decoction to the 3 litres of kombucha.
  4. Store the concoction in pressure-resistant bottles.
  5. Let the bottles sit at room temperature for a few days to build up the fizz. Refrigerate when the kombucha is appropriately fizzy (mind the pressure).
